As we know, Mother’s Day is just around the bend. My husband usually takes the boys to the store to pick something out and, on the appointed day, they present it to me with huge grins. I love how excited they get! It got me thinking however, that perhaps there were slightly easier and more fun Mother’s Day Ideas.
How about simple, homemade treats and a lovely bouquet that will never wilt…?
It’s all extremely simple to make and takes less than an hour! The best part is that the kids get to be very hands on with the project. Ready to learn how to do it? Let’s go….
1 Box yellow cake mix
1/2 cup vegetable oil
1.) Preheat oven to 350 degrees F.
2.) Combine cake mix, eggs and vegetable oil into a medium sized mixing bowl. Stir until well blended.
3.) Roll dough into small (approx 1 inch) balls. Place on baking sheet and lightly flatten.
4.) Bake for approximately 10 minutes.
*Just a little note on the dough- when you’re forming it into balls before placing on the baking sheet, it does leave your hands slick/oily. After the kids are finished placing and patting down the dough, I recommend washing their hands immediately so that it doesn’t get everywhere else.
While your cookies are baking, you can work on the filling! I chose to do a lemon filling because it’s one of my favorite flavors. The great thing about this recipe is that you can tailor it to any tastebuds. The cookies can be switched to chocolate by swapping the yellow cake mix for the chocolate version. Or red velvet. Or marble! The same rule applies to the filling.
SANDWICH COOKIE FILLING – LEMON STYLE
1 lemon peel
1/2 lemon squeezed
1/2 Cup softened butter
2 1/4 cups powdered sugar
2 tbsp milk
1.) Grate lemon zest from 1 lemon
2.) Pour zest into small mixing bowl
3.) Cut lemon in half and squeeze 1/2 into the mixing bowl. Bag the other 1/2 for another use.
4.) Add 1/2 Cup softened butter and whisk together with juice and zest until creamy.
5.) Add 1/4 cup powdered sugar, stirring well each time, until filling is thickened
*If filling consistency becomes too dry or difficult to stir, add 2 tbsp milk to soften it back up
When completed and cookies are sufficiently cooled, spoon a few heaps of filling into small bowls and add food coloring of your choice to each. (Just 1-2 drops will do)
Take a few sandwich bags out, cut off the tip on each and pour colored filling into each bag. Pipe your filling onto the bottom cookie and put another cookie on top. Voila!
The next step is to make the tissue bouquet. Here’s what you’ll need.
TISSUE PAPER FLOWERS
Pack of colored tissue paper
Package of Pipe Cleaners
Cake Pop Sticks or Clean popsicle sticks
First, you should take 2 of each colored tissue, fold them in half and cut lengthwise to narrow it down a bit. Then you will layer the colors in a stack. Fold accordion style. Tie a pipe cleaner around the middle securely. Cut the top in waves, pointy tips or whatever shape you desire. I recommend slightly pointy tips. You can clean up any edges after it’s unfolded.
Now, you can unfold each tissue carefully upon one another until it’s fanned out. Fluff and style as needed. Take the other end of the pipe cleaner and wrap it around a cake pop stick or popsicle stick to secure it before you put it in your vase. Bring over the cookies and place it all on a pretty platter. Ta-Da!
