Howdy, Sweetie! It’s me again, wandering over from Keep it Simple, Sweetie to share one of my summer staples with you….an easy 3 ingredient pulled pork sandwich. So easy and soooooo delicious! Plus, its one of those meals that everyone assumes takes massive amounts of work so you’ll earn double brownies points with your family and friends. You’re welcome.
Pulled pork is perfect for summer get togethers cause you can do all the prep work (which is minimal) ahead of time and enjoy your company instead of slaving over a hot stove, and any leftovers can go right in the freezer for future meals!
The only trick to this recipe is planning a day or two ahead so you have time to SLOWLY cook the meat. Pulled pork takes very little time to prepare and serve but it needs a long time to simmer away in the oven so be sure to buy your meat a few days before you plan to eat it.
It’s worth it, I promise!
Here’s what you’re gonna need:
1 pork butt or shoulder with bone in (mine was about 7lbs)
About 1/2 cup of bbq rub
Your favorite bbq sauce
Here’s what you’re gonna do:
Preheat the oven to 225 degrees.
Pat the pork dry with paper towels and cover with bbq rub on all sides. Let the rubbed pork sit at room temperature for about 30 minutes so it will cook evenly once in the oven.
I like to rub the pork the night before I plan to cook it to let the flavors get nice and soaked in, but if you don’t have time it tastes just as yummy without.
Sear the pork in a hot pan until all sides are browned. It should only take a few minutes per side.
Place the pork (fat side up) in a roasting pan and cover.
Cook for about 1.5 hours per pound, until the pork has an internal temp of 220 degrees.
Once pork is cooked to 220 degrees, remove from the oven and let it sit (covered) for about an hour.
Once cooled, shred the pork with a fork or fingers and stir in 1 cup of bbq sauce and 2-3 tablespoons of the bbq rub.
Serve with buns, extra bbq sauce and of course, my Grandma’s Mac N Cheese!

I love pulled pork. It’s one of my absolute favorite things to roast either in the oven or in the crock pot. It’s so versatile and can be used for so many recipes especially when you leave the sauce on the side during the initial cooking. Thanks for sharing your recipe.
