Fluffy Pumpkin Snickerdoodles

I grew up in a Snickerdoodle family. What about you? Growing up, many of my friends didn’t know what a Snickerdoodle even was. They were certainly not as popular as Chocolate Chip or Oatmeal Raisin. However, in my house, we always had them because they are my dad’s favorite cookie of all time. Till this day it is a running joke with the nieces and nephew that they should sneak the cookies when Grandpa isn’t looking because he wants the batch for himself.

In my pumpkin fever, I decided I needed to make a fall version of this cookie and bake Pumpkin Snickerdoodles. They are so chewy with the fabulous combination of pumpkin, cinnamon, and a dash of All Spice! I will say this ahead of time though – they definitely have more butter than my somewhat-healthy pumpkin oatmeal cookies that I shared last week.

Cap took Friday off work last week, so we decided to drive to Iowa to see some friends and their baby. I am so glad we took the time. It is hard to find free weekends, but it is important to make an effort to see the people you care about. It is just too easy to let important friendships slip to the side, so this trip was worth taking the time for! We had such a fun time and got our baby fix with their adorable daughter.

I always try to bring something when I stay with friends – a bottle of wine, a good dessert, or a good chip dip. I just want to bring something to say thank you and hopefully make their entertaining easier. This weekend I brought some of these delicious cookies along. They were definitely gone within a few hours so I am considering these a home run!

The directions below call for a step that might seem a little strange to you. You will take a flat bottom glass and dip it in water and then your sugar mixture for the coating. This step will do a couple things. First, it will give you a slightly caramelized sugar topping on these cookies that is AMAZING! Second, you are just slightly flattening the dough ball so that the cookie expands slightly and cooks all the way through more easily. But really, the first reason is worth the extra step!

Fluffy and delicious Pumpkin Snickerdoodles!
Recipe type: Dessert
Serves: around 30 cookies
  • 2¾ cups Flour
  • 1½ tsp Baking Powder
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • ½ tsp Ground Nutmeg
  • 1 cup Unsalted Butter, at room temperature
  • 1 cup Granulated Sugar
  • ½ cup Light Brown Sugar
  • ¾ cup Pumpkin Puree
  • 1 Egg
  • 2 tsp Vanilla Extract
  • ½ Cup Sugar mixed with 1 tsp Cinnamon, 1 tsp pumpkin pie spice, & a dash of Allspice
  1. In a medium bowl, combine the flour, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg. Then, set aside
  2. In a large bowl, beat together the butter and sugars until light and fluffy. Then, mix in the pumpkin puree, egg, and vanilla.
  3. Slowly add in the dry ingredients and mix just until combined.
  4. If dough is too sticky to work with, cover and chill the dough for at least 1 hour.
  5. Preheat the oven to 350. Prep baking sheets by lining with parchment paper.
  6. Combine the sugar and spices for the outside coating in a bowl {last line of ingredients}. I like using a shallow bowl with a flat bottom.
  7. Scoop around a tablespoon of dough and roll into a ball. Coat the dough ball in the sugar-spice mixture by rolling around in the sugar mixture and place on the prepared baking sheet, staying about 2 inches apart.
  8. Dip the bottom of a flat glass in water, followed by the sugar-spice mixture. Use the bottom of the glass to slightly flatten the dough balls. As needed, rinse the bottom of the glass off and start again.
  9. Bake for 10-12 minutes or until just slightly golden brown. Let cool on the baking sheets about 2-3 minutes and transfer to a wire rack to cool.

    What gorgeous fluffy cookies! My family wasn’t a Snickerdoodle family, as we made other cookies, but we definitely had friends who were Snickerdoodle families, and we benefitted from their baking. :) It was a nice exchange.

    When my son was little and on a gluten/dairy-free diet I made Snickerdoodles regularly and my other son was recently saying how he misses them, so this recipe is coming at a perfect time! I can’t wait to surprise him with these tasty looking cookies!
