The Love Nerds is all about apples this November, and this is the SECOND post in our Love Nerd Apple Series. Yesterday was a apple pear pomegranate cider recipe from Katie at DIY Life After College and today I am sharing a stuffed chicken recipe!

One of our favorite chicken recipes and one of my most popular posts here is my Cream Cheese and Bacon Chicken Rolls, so I was excited to try a new stuffed chicken recipe for this apple series! I think Bryan was a little nervous about it. He thought stuffing chicken with fruit was a bit odd. I proved him wrong though!

It had been awhile since I made a more traditional meal with meat, potato and vegetable, and it tasted so great!! I suggest making sweet potatoes with this recipe – you could make my sweet potato mashed or you could bake them in the oven. They just pair so well with the goat cheese.

This meal also gave us an excuse to sit down at the table to talk. Life has been so busy lately. We have both been pulling longer hours into the night and we’ve been so tired. It’s been a lot of late and quick meals or meals in front of the tv while catching up on our shows. It’s not hard to find yourself in a little bit of a rut. The routine is all find and dandy, but making real time to connect is important.

This meal was my solution. It really doesn’t take much effort to put a nice dinner on the table, and the effect is awesome. We enjoyed a glass of wine with dinner and stopped all work long enough to just talk and laugh. Everyone needs that every once in awhile, no matter who the company is. Apple, Spinach and Goat Cheese Stuffed Chicken Recipe

Apple Spinach and Goat Cheese Stuffed Chicken Recipe - An easy but delicious dinner idea!

Ingredients
  • 1 lb thin chicken breasts
  • 5 oz goat cheese
  • 1 apple - peeled cored & diced small
  • 1/4 cup chopped spinach
  • 1 egg
  • 1/2 cup seasoned bread crumbs
Instructions
  1. In a bowl, mix together the apple, spinach and goat cheese.
  2. Lay out your thin chicken breasts. Divide the cheese mixture between the chicken, spreading it on just one 1/2 of each piece. Fold the other 1/2 of each piece of chicken over and use a toothpick {spray with non-stick cooking spray first} to keep the chicken together.
  3. Get out 2 other small bowls - put the whisked egg in one and the breadcrumbs in the other.
  4. Dip the chicken in the egg and then into the breadcrumbs, coating the chicken in a thin layer.
  5. In a large skillet, heat about 1-2 tbsp of olive oil until hot. Place the chicken into the oil and cook until a nice golden brown and the juices run clear (about 8-10 minutes on each side). Always check to make sure your chicken is thoroughly cooked! NOTE: If you ever find the oil is too hot and cooking the outside of the chicken too fast, you can always put the chicken in the oven to finish cooking at 350 degree F.
