The Love Nerds is all about apples this November, and this is the THIRD post in our Love Nerd Apple Series. Yesterday was my Apple, Spinach and Goat Cheese Stuffed Chicken recipe and today I am sharing a Caramel Cheesecake Dip perfect for pairing with apples!!

Last week, we had Bryan’s RAs over for a fun Halloween hang out. Instead of their traditional Wednesday night staff meeting, they came over for snacks and a scary movie. It was so much fun! He has an amazing staff so it’s always fun hanging out with them and watching them react to the movie. Lots of yelps and screeches! Their hangouts also give me a chance to try out some new recipes. I love having new guinea pigs! 😉

One of the RAs is allergic to gluten, so it’s important for me to make sure I have at least one yummy Gluten Free recipe for her to enjoy. I decided that a Caramel Cheesecake Dip to have with apples would be perfect! It’s gluten free, super easy to make, and delicious! This recipe was definitely the hit of the night.

I also figure if it is served with fruit than it is healthy. Right?! Or at least a healthier option than putting out a big tray of brownies.

I am also a huge fan of no bake cheesecake recipes because cheesecake is one of my all time faves. I don’t like cake {yep, I said it}, but you can never go wrong with a cheesecake. I’ve shared a couple other no-bake cheesecake recipes on the blog before {Funfetti Cheesecake Dip and Lemon Cheesecake Phyllo Cups} so don’t be surprised if you see more later, too. They are just such a quick party item to throw together last minute, plus they can also be made ahead of time and are super easy to travel. I have stored mine in the fridge for a week now, and it still tastes great! This Caramel Cheesecake Dip has definitely made it onto my Thanksgiving Ideas list.

The best part of this cheesecake dip is all the yummy items you could serve with it. I chose apples because I love caramel apples and wanted a gluten free dipping item. It was also amazing with the Cinnamon and Sugar Stacy Pita Chips I had out. Also consider: graham crackers {whole or crumbled to dip the apples into}, animal cookies, pretzels, and pears. WHAT WOULD YOU SERVE WITH IT?
