Somewhere along the way in college, it became tradition to have hot queso dip at all our big get togethers. For some unknown reason, it was called “Product” like it was some secret substance only known to us. It wasn’t – just a package of Velveeta and a can of RO*TEL that could be easily thrown together and was always quickly devoured by everyone.
While I sometimes like to add buffalo sauce and chicken or add mushrooms and spinach, my FAVORITE is my Hot Sausage Queso. There is just something so perfect about the combination of creamy Velveeta and zesty RO*TEL with some hot italian sausage! Of course, we like recipes with a little kick in this house, so I also include a little of our favorite hot sauce Cholula and chili powder, too! I promise it is not too hot! With so much cheese, the spicy flavors are tamed to the perfect amount of heat.
- 1 can of RO*TEL Original
- 1 32 oz package of Velveeta
- 1 lb hot Italian sausage
- 2 tsps chili powder
- 1 tbsp preferred hot sauce (or to taste)
FOR CROCKPOT: Cook and thoroughly brown the Italian sausage in a stovetop pan. Drain the sausage when done cooking to remove all grease. Place all ingredients into the crock pot and heat on high. Continue heating on high, stirring occasionally, until all the cheese has melted. Turn the heat down to low to stay melted and warm for your party. Make sure to stir occasionally.
FOR STOVETOP: Cook and thoroughly brown the Italian sausage in a stovetop pan. Drain the sausage when done cooking to remove all grease. Add the Velveeta and RO*TEL to a deep stovetop pan and begin melting the cheese, stirring often. Once the cheese is melted, add all other ingredients and mix well. Serve hot!

We are having some college friends over, so I’m thinking this recipe will definitely have to make an appearance for old times sake! Plus, it really is the the perfect dip to serve for the game if you make it in the crock pot. It will stay warm all day for you so you don’t have to worry about the food and can enjoy the game (or, in my case, the commercials!).
