THE PERFECT FALL COOKIE – SOFT APPLE OATMEAL COOKIES!

I really love oatmeal cookies.  Whether it’s an apple pie oatmeal cookie like this one, a pumpkin oatmeal cookie (my all time favorite!) or just a plain oatmeal chocolate chip, oatmeal cookies always hit the spot!

My only exception is oatmeal raisin cookies. That combination should magically fade away into the distance. Oatmeal Chocolate Chip is obviously better! Right?!

But I digress…

Oatmeal cookie recipes tend to have a lot of butter in them with a minimum of 1 stick added in. Not mine.

When crafting my oatmeal cookies, I like to limit the amount of butter or oil but finding other ways to bring in flavor and moisture.

For this recipe, I’m using applesauce and fresh apple to bring in moisture into this oatmeal cookie recipe.

I recently made a batch of these cookies at home because I like to retest recipes every couple years. It allows me to update old photos and tweak the recipe at all if needed.

Liam has been devouring these apple pie oatmeal cookies. He is not really a big sweets person but he loves this batch of cookies!

HOW TO MAKE APPLE OATMEAL COOKIES

First, mix together the dry ingredients of flour, oats, baking powder, baking soda, salt, cinnamon and nutmeg.

Then, in a larger bowl, you will want to cream together your butter and your sugars either by hand or with a mixer. This won’t cream together super smooth like most baking recipes because there just isn’t as much butter to cream.

Add the egg, apple sauce, and vanilla to the sugar mixture until smooth.

Take your dry mixture and pour a little at a time into your wet ingredients and mix until well combined. Then add diced apple.

If the mixture seems too moist, add the extra 2 tablespoons of flour or extra oats.

Use 1 tablespoon of dough to make each cookie, placing about 2 inches apart on lined cookie sheets.

Bake for 12-15 minutes at 350 degrees F or until the edges of your cookies are turning golden brown and seem slightly firm to the touch.

WHAT TYPE OF APPLE SHOULD I USE FOR THESE COOKIES?

In general, if you enjoy eating the apple, then you will probably enjoy baking the apple into your favorite apple recipes. Apples are one of the easiest fruits to cook with.

With that said, here are the apples I work with the most because of preferred taste and/or availability: McIntosh, Braeburn, Gala, Jonathan, or Granny Smith.

SILICONE BAKING MAT – For years, I just used parchment paper and that is definitely a valid choice. However, I love how easy these silicone baking mat is and it fits the above cookie sheet well!

COOKIE SCOOPS – Take the guess work out of cookie dough size by using cookie scoops to measure the dough.

Apple Pie Oatmeal Cookies

Apple Pie Oatmeal Cookies

Soft, chewy Apple Pie Oatmeal Cookies are a low butter oatmeal cookie recipe filled with chunks of real apple and use no oil!

Ingredients

  • 1 cup all purpose flour
  • 2 cups traditional oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • A dash of nutmeg
  • 4 tablespoon unsalted butter at room temperature
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 4 tablespoon applesauce (I use unsweetened)
  • 2 teaspoons vanilla extract
  • 1/2 cup peeled and diced apple

Instructions

  1. Preheat oven to 350 and prep 2 baking sheets by lining them with parchment paper.
  2. In a medium bowl, mix together flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the butter and sugars (by hand or with a hand mixer). Add the egg, apple sauce, and vanilla and mix until smooth.
  4. Add the flour/oats mixture a little at a time into the large bowl and stir by hand until well combined. Then, add the diced apples and stir.
  5. If the mixture seems too moist, add just a little bit of extra flour or oats.
  6. Use 1 tablespoon of dough to make each cookie and drop onto the prepped baking sheets about 2 inches apart. I measured and dropped messily onto the sheet, moving quickly. Then, before baking, I went back and shaped the cookies into more round cookie form.
  7. Bake for 12-15 minutes, or until the edges become a light, golden brown.
  8. Cool on baking sheet for 2 to 3 minutes and move to a wire rack to cool completely.
