Soft and Sweet Caramel Apple Scones

Fall Mornings Call for Caramel Apple Scones!

I don’t want to speak for all of us, but I’m guessing most of our mornings are in a rut.

We follow the same routines, eat the same boring breakfast (cereal or a granola bar tend to the big winners in this house), and getting straight to work.

And there is nothing inherently wrong with that. Routines can be good and productive.

However, they can also be boring and stifling which is why I love to find fun ways to reinvigorate my mornings, like these Caramel Apple Scones.

A warm apple scone alongside a cup of coffee or tea in the morning is the best way to bring a little more pep to a cold morning.

These scones are soft, moist, and filled with amazing fall flavor. Think apples, cinnamon, nutmeg and delicious caramel!

The best part? While easy enough to make as a special treat for a normal fall morning, these Caramel Apple Scones also make an amazing breakfast menu item for the holidays!

HOW TO MAKE CARAMEL APPLE SCONES

First, you will mix together your flour, baking powder, salt, cinnamon and nutmeg, and then incorporate your butter.

I find that the easiest way for me to incorporate the butter the right way for the scones to stay nice and moist is to freeze a butter stick and then grate it before adding to the above flour mixture.

Once added, then use a pastry cutter, fork, fingers or your mixer to thoroughly incorporate.

Next, you will whisk the creamer, egg, sugar, and vanilla together and add it to the flour mixture.

Fold in your apples once the above is combined and quickly work the dough into a rectangle or circle – whichever is your desired shape. Cut your scones and place onto a parchment lined baking sheet.

Bake for 20 minutes or until golden brown and cooked all the way through.

Allow to cool before adding caramel drizzle.

TIPS FOR MAKING HOMEMADE SCONES:

COLD BUTTER: It is important to use cold butter when making scones! You can grate the butter or cut the butter into smaller pieces to make the mixing process easier, but cold butter is essential for helping the dough rise.

It creates steam pockets that help the dough rise and results in the fluffy scones I love! 

I prefer using my paddle attachment to mix the scone dough, working my way up to medium speed as I combine the butter and dry ingredients.

YOU MUST BE PATIENT! It might take a little time but the butter will break down into the mix.

If needed or if inpatient, you can stop part way through and use a fork to mix things around and break apart the butter a little faster. 

DON’T OVER MIX: While you want to make sure the butter is incorporated into the dry mix which can take some time, you don’t want to overwork the dough. Make sure to stop when the butter is broken up and mixed throughout. 

QUICKLY FORM SHAPE: The heat of your hand will make the dough stickier, so you will want to work quickly to make the rectangular shape for cutting.

Adding a little bit of flour to the working surface will help the process, but be sure not to add too much or your dough could become dry. 

DO I NEED TO USE CARAMEL CREAMER?

No. If you don’t want to use a caramel creamer, you do not have to. You can make an equal substitute between creamer and milk if that is what you desire.

You can also use a different caramel creamer if you find it but not this one.

However, substituting the caramel flavored creamer for your preferred milk will result in a less powerful caramel flavor in the scones as you will then be relying on the drizzle only to bring that flavor in.

Baking with coffee creamers is one of my favorite milk substitutes because it easily brings even bolder flavor to your baked good!

I especially like the International Delight Simply Pure creamer line, which comes in hazelnut, vanilla, and caramel, because Simply Pure creamers are made with real milk, cream, and sugar.

Plus, they are super yummy and easy to bake with!

THE PERFECT SILICONE BAKING MAT

This is my favorite silicone baking mat that I use every time I make scones! It makes working with the scone dough a lot easier. 

This baking mat is non-slip which means it won’t move on you as you roll out the dough and it’s non-stick which makes clean up a breeze!

Plus it provides you lines and measurements for making even sized scones. 

HELPFUL PASTRY SCRAPER AND CUTTER

This Pastry Cutter is one of my favorite kitchen tools for more than just making pastries.

It makes physically working the dough a lot easier, and I also use it for checking the width of my scones all the way through with the ruler built into the pastry cutter. 

Plus, I tend to use this pastry cutter to actually cut my scones out. Before I had this, I used a strong pizza cutter. 

ICING SPATULA OR PASTRY BRUSHES

When adding glazes to my scones, I used to only have a spoon for application. It worked but it always resulted in a really uneven glaze. 

Now, I use either my angled icing spatula which is also perfect for making sugar cookies or my pastry brushes.

Caramel Apple Scones

Start your fall mornings and holidays off with a delicious caramel apple scone filled with fresh apple bites! The perfect scone recipe to make for Thanksgiving or Christmas!

Ingredients

  • 2 cups flour
  • 2.5 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tsp cinnamon
  • 1 teaspoon nutmeg
  • ½ cup unsalted butter, frozen (one stick)
  • 1 large egg
  • ½ cup International Delight Simply Pure Caramel
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 cup apple, peeled and diced
  • caramel sauce

Instructions

  1. Preheat oven to 400 F, and line baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
  3. Grate the frozen butter into the flour mixture. I use my large box grater and a cutting board for grating the butter. Toss butter into the flour mixture and combine it with a pastry cutter, fork, or just your fingers.
  4. In a small bowl, whisk the creamer, egg, sugar, and vanilla together. Add to the flour mixture and then toss the mixture together until everything appears moist.
  5. Slowly and gently fold in the apples. Do not overwork the dough!
  6. This part is a bit sticky because the dough will be wet. Flour your hands and the working space and then work the dough into either a long rectangle or a round circle. If a long rectangle, I usually cut in half and then cut the two halves into 4 pieces with an X. If a circle, cut into 8 equal wedges. I like using a sharp pizza cutter for this process.
  7. Place scones at least 2 inches apart on the parchment lined baking sheet.
  8. Bake for 20 minutes or until lightly golden and cooked through. Remove from the oven and allow to cool slightly before adding glaze.
  9. For the topping, warm up some caramel sauce and drizzle over scones.
