DELICIOUS ONE POT LASAGNA SOUP TO WARM YOU UP ON A COLD WINTER’S NIGHT!

Winter has come early to Chicago this year! We just survived our first blizzard in the new house … in NOVEMBER! My Minnesotan husband thinks this is normal but I say, no! We’ve been enduring colder weather than normal for this time of year and are currently surrounded by a whole lot of snow. Some years we’re lucky if we end up with a White Christmas. All this means that I’ve been all about the warm comfort meals, like this one pot Lasagna Soup!

This three cheese lasagna soup is definitely going to be made a lot this winter season for us! First off because it only takes me about 30 minutes from start to finish to enjoy, and not all of that requires my active attention. It’s a really easy dinner recipe to make while my toddler runs around the kitchen.

Second because it is full of the lasagna flavor everyone loves – or at least everyone in my house loves – without the time or effort that a lasagna takes to prep and cook. I still love making my Lasagna Rolls and plan on making a big batch of those as part of baby #2 meal prep, but this soup is perfect for dinner on any night.

Last because who doesn’t love a good one pot soup recipe on their meal planning?! Easy cooking and easy clean up is a huge win win for everyone!

HOW TO MAKE LASAGNA SOUP

While I’m obviously sharing the recipe we love for this Three Cheese Lasagna Soup, what I love about it is that it’s easy to customize based on your own preferred lasagna recipes. Here is what I think are the important pieces:

Start by cooking your meat and adding in a little garlic. We prefer hot Italian sausage like we do in our lasagna but this could be easily changed to mild or even group beef or ground turkey. I suggest not skipping the red pepper flakes if you have them in the house because it helps give the soup a little kick you want on a cold winter night but it does not make the soup “spicy” if that’s a concern.

Then add in your chicken broth, tomatoes, and spices. If you don’t have the individual spices on hand, you could always substitute with the combined Italian seasoning or switch out for your preferred lasagna spices.

We like adding spinach into our lasagna recipes because they offer great nutrition without a ton of taste in our opinion, especially when combined with tomato sauce and cheese. I suggest trying it before skipping it completely, but this is one item I might not have in the house all the time and not adding it wouldn’t keep me from making this soup.

From there add in your noodles and your cheese! Again, two things that are easy to switch out and customize to your preferences. My sister and husband both questioned having thick chunks of lasagna noodles which I love for this recipe, but you could easily add in a different noodle instead.

WHAT IS TOMATO PASTE AND WHY USE IT?

People seen to either love tomato paste, always having it as a pantry staple, or don’t understand what it’s for. So here is my simple explanation. Tomato paste is a thick paste made by cooking tomatoes for several hours to reduce the water content, straining out the seeds and skins, and then cooking the liquid again to reduce the base to a thick, rich concentrate. It’s consistency is weird, looking like a glob.

Since the water has been removed and it’s such a concentrated product, you add a lot of tomato flavor to the recipe without any additional liquid. It helps add extra body and flavor and it can help thicken sauces if too thin.

I love cooking it on the pan a little bit before adding in the broth because I feel like it helps bring out even more flavor from the tomato paste. It was a tip I read a long time ago from chefs and have always incorporated it into my own cooking when I can.

HELPFUL KITCHEN TOOLS FOR MAKING THIS RECIPE:

Stock Pot: Having a large, nonstick stock pot is essential for making soup recipes on the stove. You could also use a Dutch Oven. Don’t forget good cooking utensils and a ladle!

If adding fresh garlic and spinach, you’ll need a good chef’s knife and cutting board.

TIME TO MAKE A BATCH OF ONE POT THREE CHEESE LASAGNA SOUP!

One Pot Three Cheese Lasagna Soup

Total Time: 35 minutes

This One Pot Lasagna Soup is perfect for your cold winter menus! Full of Italian sausage, tomatoes, spinach, cheese and lasagna noodles, it has all the yummy flavors of a hearty lasagna without all the time and work! 

Ingredients

  • 1 pound Italian Sausage, I like using hot
  • 2 tablespoons minced garlic
  • 1/4 teaspoon red pepper flakes
  • 6 ounces tomato paste
  • 64 ounces chicken broth, low sodium
  • 30 ounces petite diced tomatoes
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups spinach, chopped into thin strips
  • 12 uncooked lasagna noodled, broken into 1-2 inch pieces
  • 1/2 cup parmesan, grated or shredded
  • 1 cup mozzarella, grated or shredded
  • Ricotta, added as topping

Instructions

  1. Heat large soup pot over medium high heat. Add beef and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and cook for 60 seconds. Drain off excess grease.
  2. Add in your tomato paste and cook on medium-low heat with the meat, garlic and red pepper flakes for a few minutes. Then add in your chicken stock and diced tomatoes. Stir until well combined. Add in the seasoning {oregano, parsley, basil, salt and pepper} and the spinach. 
  3. Bring to a light boil and then add in the broken noodles. Cook for 10-15 minutes, or until the noodles are tender.
  4. Stir in the parmesan and the mozzarella. Ladle your soup into bowls and top with a spoonful of ricotta cheese! 

Notes

NOTE: If reheating for leftovers, I have found adding a little more chicken broth into the pot with the leftover soup helps make it last longer and get back a more liquid consistency.
