Ingredients

  • 1 box fettuccini noodles
  • 4 tablespoons butter
  • 6 tablespoons orange zest
  • 3 teaspoons finely shredded fresh mint
  • Salt and pepper to taste
  • 3/4 cup freshly squeezed orange juice
  • 1/2 cup fresh parmesan

Instructions

  1. Cook pasta based on box directions.
  2. Melt butter in a large skillet.
  3. Stir in orange zest and mint (save just a little for a garnish if desired) as well as salt and pepper (I start with a pinch of salt and 4 turns of my pepper grinder to start. You can add more later if desired.). Only cook for 1-2 minutes.
  4. Pour in orange juice and cook until it's reduced to about half it's volume and has thickened slightly. Remove skillet from heat source.
  5. When pasta is cooked al dente, drain it and then toss in the sauce.
  6. Top with grated cheese and any remaining zest and mint as a garnish.
