Pumpkin Cinnamon Roll Muffins

Ingredients

  • 1 can of cinnamon rolls
  • cup pumpkin butter
  • 2 eggs
  • ¼ cup Half and Half
  • 1 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp clover
  • ½ cup pecans chopped

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray muffin pan with a non stick cooking spray.
  3. Unroll your can of cinnamon rolls and cut each roll into 6-8 pieces. {set aside the icing for later}
  4. Toss the rolls into the pumpkin butter and then place into your muffin tins, filling 2/3 of the way.
  5. In a bowl, whisk together the eggs, cream, vanilla, and spices until well combined. Pour the mixture over the cinnamon rolls, filling 2/3 of the way.
  6. Add the pecans on top of each if desired.
  7. Bake for 15-20 minutes or until tops are golden brown.
  8. Warm up your icing slightly and drizzle onto the top.
