Ingredients

  • 8 peaches peeled and cut into thick slices
  • 1/3 c brown sugar
  • 1/3 c sugar
  • 1 tsp vanilla
  • 2 tsp corn starch
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

  • TOPPING
  • 3/4 c brown sugar
  • 1 cup traditional oats
  • 2/3 c flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 c butter well softened
  • 1/2-1 c chopped pecans if desired

Instructions

  1. Mix all ingredients together for the peaches in a medium bowl. You will want to make sure you have at least 3/4" slices of peaches if you don't want them to cook down too much. Set aside while you make the crisp topping.
  2. Mix all ingredients for the topping in a medium bowl. If you like a lot of topping, double the batch.
  3. Lightly grease or prep with cooking spray a 9x13 casserole dish.
  4. Add peach mixture into a single layer in the dish, using a slotted spoon to leave behind any juice. Then, add your crisp topping.
  5. Bake at 350 F for 40 minutes. Then enjoy!
