Ingredients

  • 1 Red Bell Pepper remove core through the top of the pepper to keep it intact.
  • 1 Egg

Instructions

  1. Cut your pepper rings.
  2. Lightly heat up your pan and prep with cooking spray.
  3. Add your pepper ring and crack your egg into the middle of the ring. You might want to press down on the pepper ring at first while the egg whites set.
  4. Cook until the egg is at your preferred doneness. You will need to take a knife or spatula an pull apart the egg whites so uncooked whites can fall further down onto the pan. This will help it cook faster.
  5. Top with basil if you like!
