This One Pot Lasagna Soup is perfect for your cold winter menus! Full of Italian sausage, tomatoes, spinach, cheese and lasagna noodles, it has all the yummy flavors of a hearty lasagna without all the time and work!
Heat large soup pot over medium high heat. Add beef and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and cook for 60 seconds. Drain off excess grease.
Add in your tomato paste and cook on medium-low heat with the meat, garlic and red pepper flakes for a few minutes. Then add in your chicken stock and diced tomatoes. Stir until well combined. Add in the seasoning {oregano, parsley, basil, salt and pepper} and the spinach.
Bring to a light boil and then add in the broken noodles. Cook for 10-15 minutes, or until the noodles are tender.
Stir in the parmesan and the mozzarella. Ladle your soup into bowls and top with a spoonful of ricotta cheese!
NOTE: If reheating for leftovers, I have found adding a little more chicken broth into the pot with the leftover soup helps make it last longer and get back a more liquid consistency.
