Gooey Raspberries and Cream Bars

Ooey Gooey Raspberries and Cream Bars - Delicious desserts are worth a little bit of mess!

Ingredients

  • 1 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup traditional oats
  • 1/3 cup of brown sugar
  • 1/2 tsp of nutmeg
  • 1/2 tsp of cinnamon
  • 1 cup of butter melted
  • 8 oz cream cheese room temperature
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1/2 cup of raspberry jam seedless

Instructions

  1. Preheat oven to 300 degrees.
  2. Line an 8x8 pan with aluminum foil and coat with cooking spray.
  3. Mix together the flour, baking soda, salt, traditional oats, brown sugar, nutmeg, and cinnamon.
  4. Melt the butter and mix into the dry mix until well absorbed. Use your hands to get everything well combined.
  5. Take the mixture and press firmly into the bottom of the 8x8 pan, leaving just a little extra to sprinkle on top if desired.
  6. Bake the crust in the oven for 5 minutes.
  7. Combine cream cheese, sugar and vanilla in a bowl. When the crust has been removed from the oven, smooth an even layer of the cream cheese mixture onto the crust.
  8. Add your raspberry jam in an even layer on top of the cream cheese.
  9. Top off with remaining oats mixture if desired.
  10. Bake in the oven for 30-35 minutes.
  11. When you remove from oven, let it sit for a few minutes to cool. Then, carefully use the aluminum foil to remove bars from the pan and place on a cooling rack.
