Sundried Tomato Chicken Meatballs with Mushroom Linguini Alfredo

Ingredients

  • 1 package Cooked Perfect Sundried Tomato & Roasted Garlic Chicken Meatballs
  • 1 Box of Linguini or pasta of choice
  • 2 tablespoons Butter
  • 3 tablespoons Garlic, minced
  • 2 tablespoons flour
  • 1 cup Chicken Stock
  • 1 cup Milk
  • 1 1/2 cup Shredded or Grated Parmesan, reserve a little for garnish
  • 1 cup Mushrooms
  • Pepper to Taste
  • Fresh Basil to Taste (I added about 3 tbsp, reserving a little for a garnish on top)

Instructions

  1. Cook your pasta per the box instructions. Set aside when done. 

  2. Heat 1 tbsp of butter in large pot over medium heat.
  3. Add 2 tbsp of the minced garlic and cook for one minute, stirring frequently.
  4. Add flour and stir to combine. Cook for one minute to cook the flour down.
  5. Add in the chicken stock slowly, whisking the whole time. Then, whisk in the milk.
  6. Bring the mixture to a simmer and let cook until it thickens slightly (a couple minutes).
  7. Stir in Parmesan Cheese until completely melted and add pepper to taste.
  8. Reduce heat and stir occasionally until you are ready to add to pasta.
  9. Meanwhile, add the rest of your butter to saute pan and add mushroom. After a few minutes, add 1 tbsp garlic. Cook for a few more minutes, then add cooked pasta, Alfredo Sauce and Basil. Mix well.
  10. Steam Cooked Perfect Meatballs in the microwave steam in pouch for 2 minutes. Then add meatballs to pasta and enjoy!
