1 7ozLa Morena whole jalapeñosseeded and diced
1/3cupsour cream
1cupshredded Pepper Jack cheese
1/3cupshredded Mexican Cheese
1/4cupgrated Parmesan cheese
Black pepper to taste
4ouncescream cheese
4strips of baconcooked and chopped
2tablespoonschopped chives
Instructions
Add corn, jalapeños, sour cream, Pepper Jack, Mexican Cheese Mix, and Parmesan into your slow cooker. Season with pepper (to taste). Stir well until all combined. Then, top with cubes/chunks of cream cheese spread throughout the mix.
Cover and cook on low for 2 hours.
When time is up, stir until everything is well combined. Cover and cook on high heat for an additional 15-20 minutes. If your dip has a little liquid at this point, cook uncovered for at least 10 minutes to help cook it away.
Cook your bacon until done and crispy (or you could complete this step earlier) and chop into bits when they have cooled.
Serve dip immediately and top with bacon and chives, if desired.
