Course Main
Author Maggie @ The Love Nerds

Ingredients

  • 5 large bell peppers
  • 1 lb ground chicken
  • 1 cup cooked rice
  • 1 can of original Rotel drained
  • 8 0 z fresh corn
  • 1 tbsp chopped fresh cilantro
  • 2 tsp chili powder
  • 2-3 jalapeños seeded and diced small
  • 1/2 cup ranch dressing or to taste
  • 1/2 cup cheese of choice I used a 3 cheese blend with a cheddar base

Instructions

  1. Heat the oven to 400 degrees.
  2. Cook your rice, following the directions for the rice you are using.
  3. Put your ground chicken into a medium-large saute pan and season with garlic powder. Start browning the meat.
  4. After browning the meat, add the Kraft Classic Ranch, cilantro, and chili powder to the pan. Mix well.
  5. Now, add the Rotel, corn, jalapeños and rice. Mix well. If it looks like you need more ranch or you think it TASTES like it needs more ranch, add a little extra at this stage.
  6. Lastly, stir in cheese.
  7. Clean your peppers - either coring out the middle or cutting them in half. Spoon the meat mixture into each pepper and put them in a pan. Cover with aluminum foil and bake for 30 minutes.
  8. I like adding a little cheese to the top of each pepper and cook for 5 more minutes in the oven without the foil. There can never be too much cheese!
