Chicken and Wild Rice Casserole

Combine chicken, wild rice, carrots, celery, onions, seasoning and a light cheese sauce for a tasty Chicken and Wild Rice Casserole dinner!

Ingredients

INGREDIENTS FOR CHICKEN AND WILD RICE CASSEROLE

  • 2 tablespoons Olive Oil
  • 1 Medium Onion (chopped)
  • 3-4 stalks Celery (chopped)
  • 3 Carrots (peeled and chopped)
  • 2 tablespoons Minced Garlic
  • 2 cups Cooked Chicken Breast (chopped or shredded)
  • 6 oz Uncle Ben's Long Grain and Wild Rice Box (about 3 cups prepared rice)
  • 2 tablespoons Parsley (chopped fresh or dried)
  • Salt and Pepper to taste

INGREDIENTS FOR CHEESE SAUCE

  • 2 tablespoons butter
  • 1/4 cup of flour
  • 1 cup chicken broth
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F.

  2. Heat oil in a medium to large skillet. Then, saute onion, celery, and carrots for 5 to 10 minutes. The longer you saute, the less crunch your vegetables will have in the casserole. 

  3. Add garlic, chicken, cooked rice, parsley, salt and pepper to the pan. Cook for 1-2 minutes and then turn the heat source off.

  4. Next prepare the cheese sauce: Melt butter in a medium sauce pan over medium heat. Whisk in flour. Then, slowly pour in the chicken broth while constantly whisking the mixture. Whisk until it thickens and then add in the cheese. 

  5. Pour cheese mixture into the chicken and rice mixture and stir well. Take a small taste and make sure you like the balance of flavors or if you need additional seasoning.

  6. Transfer to 9x13 casserole dish. Top with additional cheddar cheese or parmesan if you desire and bake for 30 minutes.
