These Gingersnap Cookies are my favorite Christmas cookie! Soft, spiced cookies with rich molasses and a cracked, sugar top, these gingersnaps will be a hit all holiday season alongside hot cocoa, coffee, ice cream and more!

Ingredients

  • 2 cups flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • 3/4 cup shortening
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg

Instructions

  1. In medium bowl, mix flour, baking soda, salt, ginger and cinnamon. 

  2. In large bowl, beat shortening and sugar with mixer until light and fluffy. 

  3. Beat in molasses and egg. 

  4. Gradually stir in flour mixture until well mixed. 

  5. Shape dough into 1 inch balls. Roll in additional sugar. 

  6. Bake 12 minutes at 350 degrees F.
