Making dinner in 10 minutes is always a win-win in this household, especially since I somehow forget every day that dinner time is going to arrive. However, this time when Bryan got home and asked what was for dinner, I had a quick, easy and fun idea I could whip up in no time – Popcorn Shrimp Po Boys.

The first time I ever had a Po Boy was when we went to New Orleans with my in-laws a few Decembers ago. My MIL went to college in New Orleans and wanted to be able to show us around. We sat on this little table that was open to the outdoors so we could soak in the beautiful weather (a needed break from cold Chicago weather), we sipped a cold glass of wine, and ate a tasty New Orleans’ classic.

So what makes a Po Boy a Po Boy? From what I read in preparation for this post, this is a contested debate. Everyone seems to agree that you want french bread as a your base that’s crispy on the outside and soft on the inside, so lightly toasting the sandwich bread is a must. 

The usual consensus for toppings stays within the range of pickles, hot sauce, lettuce, mayo, and tomatoes. I wanted to be inspired by the sandwich we enjoyed that beautiful day but also offer a twist that I thought my husband would enjoy – which meant no pickles or tomatoes.

I made a basic Remoulade Sauce which pairs so well with seafood and provides a nice kick to the SeaPak® Popcorn Shrimp! The combination of ingredients might scare a couple people away but I promise you that this Remoulade Sauce is not overpowering or overly hot. That’s just not my cup of tea.

It does add a lot of flavor to the Popcorn Shrimp Po Boys though that you don’t want to miss and includes the hot sauce and mayo required for a traditional Po Boy. I tossed my sauce with some coleslaw, my “lettuce” addition to the sandwich recipe.

Ingredients
  • 1 box SeaPak® Popcorn Shrimp, cooked to directions
  • French Bread Loaf or French Bread subway rolls, toasted slightly in oven
  • 1 bag shredded coleslaw
Remoulade Sauce Ingredients
  • 1 cup mayo
  • 2 tablespoons Horseradish Mustard
  • 1.5 tablespoons Louisiana Hot Sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons Creole Seasoning
  • 1 teaspoon minced garlic
  • 1 teaspoon white wine vinegar
  • Pinch salt
  • Pepper to taste
Instructions
  1. Add all the sauce ingredients for the sauce into a bow and mix well. Taste to make sure sauce isn't too hot or too mild for your preference. If too hot, add more mayo. If not hot enough, add a little more hot sauce and creole seasoning.

  2. Toss some of the sauce with your 8 oz of coleslaw. Start with less and add more to your desired level of slaw coverage.
  3. Add cooked popcorn shrimp and then slaw to bread. Top with a little more sauce if desired and enjoy!
