Kaylin here, stopping by from Keep it Simple, Sweetie to share another sweet treat with you today!
But instead of telling you about these delightful diet ditchers known as Rocky Road Cake Mix Brownies, I think you should take a look for yourself.
A pictures worth a thousand words, right?!

If I had just told you that these super chocolaty brownies had a creamy caramel layer chock full of salty peanut perfection and gooey marshmallow goodness you probably would have said “no thanks” and went about your day NOT craving these bites of heaven… and what a shame that would have been! 😉
But now that you’ve seen all that yumminess for yourself, I dare you to stop thinking about them.
Go ahead, I’ll wait.
If it’s any consolation, I just ate one and I can’t stop thinking about them either. So just be sure that when you make a batch of these you have someone to share them with because if you don’t you will eat all of them.
Trust me. All. Of. Them.
So let’s get started before I polish off the rest of this batch!
Here’s what you’re gonna need:
For the brownies,
2 packages German chocolate cake mix
1 cup butter, melted
1/2 cup evaporated milk
1/2 cup chocolate chips
3/4 cup salted peanuts
3/4 cup mini marshmallows
For the caramel:
1 cup brown sugar
1/2 stick butter
1/4 cup evaporated milk
Here’s what you’re gonna do:
Preheat oven to 350 degrees. Mix the cake mix, melted butter, and evaporated milk together to form a thick dough.
Spread half of the mixture in the bottom and up the sides of a greased 9×13 inch baking dish.
Bake for 10 minutes.
While the base is cooking, combine brown sugar, butter and evaporated milk over medium heat. Allow mixture to come to a boil for 1 minute. Remove from heat and and let cool to room temperature. (More details here)
Sprinkle the peanuts and marshmallows over the cooked bottom brownie.
Pour cooled caramel over chocolate chips.
Take a handful of remaining dough, flatten and layer on top of the caramel. Continue until the top is completely covered and all the dough has been used. Top with chocolate chips.
Bake at 350 degrees for 25-30 minutes.
Brownies will be slightly loose when removed from oven, don’t worry, once they cool they will firm up.
Let the brownies cool for about an hour, slice and enjoy!
