These Baked Funfetti Cake Mix Donuts are a fun way to celebrate any special occasion. Today, I am celebrating my friend Maggie. She has to be one of the sweetest, honest, nurturing and hardworking people I know, and guess what? I have never met her in person. I will be able to this May and I am counting down the days. You know how sometimes you just instantly connect with someone, I think Maggie is like that with everyone she meets. And I am glad I am one of them. Both of us celebrate our birthdays in March, so maybe that is why we get along so well.
Funfetti is a great way to fest up any food occasion. A few weeks ago my kids had spring break, so the first morning I made these little bites of heaven to kick off our week of no school. A reason to celebrate right?! The kids loved them. And I was surprised I did as well. The frosting is a perfect match to this sprinkled filled donut. This recipe is so easy to make and ready in less than 30 minutes. So whip up a batch for a special occasion! Your kids and friends will start the day with a happy celebration and who wouldn’t want that?

1 box Funfetti Cake Mix
¾ cup buttermilk
2 tablespoons butter, melted
1 ½ cups of powdered sugar
2 tablespoons butter, melted
1-2 tablespoons milk
1 teaspoon clear vanilla extract
Sprinkles, if desired
To make the donuts pre-heat the oven to 425 degrees.
Mix together all of the ingredients in a medium mixing bowl until well combined.
If you don’t have a piping bag, cut the corner of a Ziploc bag, add batter and pipe the dough evenly into the prepared pans, about 2/3 full in each donut ring.
Set in oven and bake for 7-9 minutes, remove from oven and cool on baking rack.
Remove donuts from baking rack once cooled.
Make frosting by mixing together with a hand beater powder sugar, melted butter and milk. Start off using 1 tablespoon of milk, then add more milk to get your desired consistency.
Frost the donuts by dipping the tops into the frosting gently shake to get off excess frosting, then top with sprinkles. Repeat with remaining donuts and frosting.
Serve immediately or store on counter until ready to serve.
To store leftovers, if you have any and store in a container with lid or Ziploc bag.
