Sansa’s Lemon Cakes

Hi, Nerds!! Who is excited for the new season of Game of Thrones?! I was originally going to post this last week for the season opener but I ended up having bronchitis. So my extreme excitement for GOT had to wait a week! But now I’m serving up Sansa’s Lemon Cakes!

I have been going through GOT withdrawal, people! Bryan and I read through all the books the summer we got married, and it was fabulous! There was a lot of relaxed beach reading on our honeymoon. Can you believe it’s been 3 years since A Dance with Dragons came out? And who knows when we will get The Winds of Winter? We could still be waiting another 3 years.

The only thing that keeps me going completely crazy from withdrawl is the show! My blog bestie Rebecca from Living Better Together shared a version of Sansa’s Lemon Cakes last year. It is a gorgeous and delicious recipe, but it takes some work! She says herself it’s one of the more complicated recipes she has shared. Since I love Sansa and I love lemon, I decided to offer a simpler version of Sansa’s favorite dessert.

This version of Sansa’s Lemon Cakes is inspired by Lemon Chiffon Cake we used to have growing up. It was similar to an Angel Food cake. It came from a box though, and, when they stopped producing it, we went a LONG time without them. We seriously mourned this loss because we all loved the cake. This came pretty darn close though!

Sansa's Lemon Cakes

Ingredients
  • 1½ cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup plain or vanilla yogurt (could also use sour cream)
  • 1 cup sugar
  • 3 large eggs
  • 5 tsp grated lemon zest
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • ⅓ cup freshly squeezed lemon juice
  • Glaze:
  • 1 cup powdered sugar
  • 2 tbsp freshly squeezed lemon juice
Instructions
  1. Preheat the oven to 350 degrees F. Grease and flour your mini bundt cake pan.
  2. Mix together the flour, baking powder, and salt into 1 bowl.
  3. In another bowl, whisk together the yogurt, the eggs, vanilla, lemon zest, and 1 cup of sugar.
  4. Slowly whisk the dry ingredients into the wet ingredients.
  5. Then, fold the vegetable oil into the batter, making sure it’s all incorporated.
  6. Evenly pour the batter into the greased and floured mini bundt pan. Bake for about 20 minutes, or until a tooth pick placed in the center of the bundt cake comes out clean (or almost clean).
  7. Let sit in the bundt cake for at least 10 minutes on the counter. Then, remove onto baking rack.
  8. Prepare the glaze: stir together the powdered sugar and the lemon juice. If you want a thinner glaze, add more lemon juice.
  9. Drizzle the glaze on top of the cakes. Enjoy!
