There is something special about digging through the family cookbook. You see recipe after recipe that brings up fond memories. Some are of easy, quick meals on a busy school night – the one moment of the day where everyone came together. Some are of that first bite of Thanksgiving dinner or of Christmas cookie making. I went for a dive through my mom’s cookbook just a few weeks ago and this recipe for Swedish Meatballs came out with me.

My mom would normally whip up a batch of these Swedish Meatballs during the holidays and toss them with BBQ sauce in a crock pot. It was one of the many yummy snack items on the kitchen counter that we could much on through board games, chatter or gift opening. The best thing is you can make these meatballs days or even a week ahead of time and then toss in sauce in a crock pot earlier in the day. Easy peasy!

I decided to pair it with the Baked Spaghetti Casserole I made and it was an awesome decision! I even have my mom on board, too. I gave her part of my large batch, along with a small casserole, and she has been eating little bits at a time for lunch. It makes great leftovers in the fridge, but these can also be frozen for later. Perfect for easy meals in the future.

I will tell you about my rushed stupidity in making these though. It was a busy week with family and work, but I also had to host the RA dinner for 16 people. Plus, I woke up with a migraine. Never a good combo. I was trying to stay on schedule and feeling run down, so it was a day of stupid choices and klutzy moments.

Learn from my lesson – do NOT cook these on a flat sheet. For some reason, I didn’t take into account that with beef from grease until I began to smell smoke. Yup. Smoke. Now normally this is frustrating and annoying, but ,when you live in campus living , it’s terrifying. The last thing you want to do is be responsible for making 500 students evacuate the building because you set off the fire alarm.

I immediately opened all the windows, moved a bunch of fans into the kitchen, and began shaking a towel dramatically in front of the smoke detector. I kept this up off and on for about 15 minutes because I couldn’t stop cooking the meatballs. I was exhausted!

Ingredients
  • 3 lbs ground beef
  • 1 large onion finely chopped
  • 4-5 pieces of bread
  • 1 c. milk
  • 3 eggs
  • 2-3 tbs parsley
  • garlic salt and pepper to taste
Instructions
  1. Tear up the bread into small pieces and soak in the milk. Add more after 10 minutes or so if their is still more milk that needs to be soaked up.
  2. Prep 1 or 2 pans with foil before your hands get messy. You will want pans with sides so the grease doesn't spill in your oven.
  3. When the milk is soaked up, mix all the ingredients in a large bowl well.
  4. Form into small meatballs, about 1.5", and put on your lined pans.
  5. Cook at 350 degrees for 30-40 minutes, or until the meatballs are cooked through.
