Switch up your morning routine with these tasty and easy Egg Breakfasts!
My typical morning: I usually wake up a few minutes before Bryan’s first alarm and while I give myself a little time to lay there and relax, I normally get to work pretty fast. I grab my phone and checking in with the world is the first step – email, social media, etc. I know some people say this can derail the beginning of the day, but I find it helps me focus on the next item of business. Then I head upstairs to my breakfast which is normally a boring bowl of cereal or granola bar so I can quickly get to my computer.
Somewhere along the way I decided that breakfast had to be something quick and out of a box to get working faster. I thought it was a better use of my time than making something fresh or more well rounded. But why?
Taking care of myself and eating healthy should be a priority. Even forgetting the health piece, the self care of letting myself enjoy something more flavorful than a granola bar is good for my happiness level. Happiness should not be overrated.
So I took on a challenge of making breakfast less boring – at least a few times a week! I was going to break the breakfast rut. Step one? Create a few quick egg breakfast recipes that would pair with my new favorite yoghurt from noosa®. Besides the fact that noosa® is farm fresh, which I love, it is perfectly rich and creamy. Plus, the flavors are amazing and include a wide range, including pumpkin, strawberry rhubarb, coconut, and tart cherry. I love having a stocked fridge of noosa®!
Important note before getting to the 3 quick egg breakfast recipes: All of these recipes take roughly 15 minutes or less. Yes, I consider that quick and I hope you do, too. 15 minutes and you could be enjoying an Open Faced Avocado and Egg Breakfast Sandwich. Doesn’t that sound better than cereal?
AVOCADO AND EGG BREAKFAST SANDWICH
- Piece of hearty toast
- ½ Avocado
- salt and pepper to taste
- Open the avocado, remove the skin, and place half of the avocado in a small bowl. Add salt and pepper to taste and smash.
- Toast one piece of toast.
- Cook egg to your preferred level of doneness.
- Add the avocado to the top of the toast. Top with your egg. ENJOY!
This is the recipe I will probably make most often. It was ready in under 10 minutes and tasted amazing. I’m also avocado obsessed, which definitely influences my choice.
I love pairing this sandwich with the noosa® Strawberry Rhubarb Yoghurt. It’s the perfect sweet and tangy combination you get with a Strawberry Rhubarb pie and pairs really well with the creamy avocado.
EGGS IN A BELL PEPPER RING
The next recipe I am sharing with you all is Eggs in a Bell Pepper Ring. I am a huge bell pepper fan and they offer so many great nutrients. The flavors of bell pepper and egg go perfectly together! It’s a winning combo in an omelet and it’s a winning combo here!
- 1 Red Bell Pepper, remove core through the top of the pepper to keep it intact.
- 1 Egg
- Cut your pepper rings.
- Lightly heat up your pan and prep with cooking spray.
- Add your pepper ring and crack your egg into the middle of the ring. You might want to press down on the pepper ring at first while the egg whites set.
- Cook until the egg is at your preferred doneness. You will need to take a knife or spatula an pull apart the egg whites so uncooked whites can fall further down onto the pan. This will help it cook faster.
- Top with basil if you like!
If you love coconut, you have to go buy noosa® Coconut Yoghurt right away! It was so creamy and paired so well next to this Egg and Bell Pepper breakfast. While this flavor is seriously amazing on it’s own, it would be really great with maple granola, too.
Are you ready for the last quick egg breakfast recipe? This one is so pretty that it would make a great brunch option as well as breakfast for one. You will definitely be closer to the 15 minute mark for this one depending on how you like your eggs cooked.

While this will not be the recipe I make the most often, this is definitely my favorite of the three! It was delicious and beautiful. This is definitely a must make brunch recipe for the future when we have guests because it looks like it took more time than it did! Plus, I can never say no the combo of eggs, bacon and crescents rolls together.
My preferred noosa® pairing with this dish? noosa® Raspberry Yogurt. It’s definitely a little tart but it’s also a little sweet. It felt really light and fresh along side this crescent heavy breakfast.
