A new, light salad dressing recipe that will bring a delicious sweet & tangy touch to your salads!
I’ve been slowly experimenting with making some light vinaigrettes for my salads. It’s not because I don’t buy or like store bought dressings; I do. But homemade dressings can be far healthier and offer a lighter touch to salads without much extra work. The first one I shared here on the blog was a Caesar Vinaigrette, and it’s a favorite of mine for dinner because it pairs so well with almost anything.
Now I’m sharing my Honey Lime Vinaigrette which I’ve been loving for lunch salads or any salad with lots of fresh veggies, like my Crispy Shrimp Taco Salad.
This Honey Lime Vinaigrette is light and fresh, which I believe comes from just the perfect amount of citrus – both juice and zest. A little sweet, a little tangy! I have a feeling it might become a favorite for the upcoming winter months because it brings a little extra happy to the dreary snow and cold. And we all need that. It’s just becoming fall, and I am already dreading the winter months. At least I will have my little guy to keep me company this time around!
- 1/4 c olive oil
- 1/3 c honey
- Juice from 1 lime
- 1 tbsp lemon zest add more if desired
- pinch coarse salt
- pepper to taste

Add all ingredients into blender or food processor. Blend until smooth.
