Fall mornings deserve Caramel Apple Scones! And so do you!
I don’t want to speak for all of us, but I’m guessing most of our mornings are in a rut. We follow the same routines, eat the same boring breakfast (cereal or a granola bar tend to the big winners in this house), and getting straight to work. There is nothing inherently wrong with that. Routines can be good and productive. However, they can also be boring and stifling which is why I love to find fun ways to reinvigorate my mornings, like these Caramel Apple Scones.
Cool fall mornings deserve something warm and delicious, like a cup of hot coffee and a Caramel Apple Scone. These scones are soft, moist, and filled with amazing fall flavor. Think apples, cinnamon, nutmeg and delicious caramel!
Even though I’m enjoying a Caramel Apple Scone and caramel flavored coffee next to my laptop, it feels special! Treating ourselves is more important than people ever give it credit. It keeps us feeling energized and cared for. I definitely feel more engaged in my morning routine when I get to enjoy something tasty over my plain granola bar.
- 1 large egg
- 2 cups flour
- 2.5 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- ½ tsp salt
- ½ c unsalted butter, frozen (one stick)
- ½ c International Delight Simply Pure Caramel
- ½ c brown sugar
- 1 c apple, peeled and diced

- Preheat oven to 400 F, and line baking sheet with parchment paper.
- In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
- Grate the frozen butter into the flour mixture. I use my large box grater and a cutting board for grating the butter. Toss butter into the flour mixture and combine it with a pastry cutter, fork, or just your fingers.
- In a small bowl, whisk the creamer, egg, sugar, and vanilla together. Add to the flour mixture and then toss the mixture together until everything appears moist.
- Slowly and gently fold in the apples. Do not overwork the dough!
- This part is a bit sticky because the dough will be wet. Flour your hands and the working space and then work the dough into either a long rectangle or a round circle. If a long rectangle, I usually cut in half and then cut the two halves into 4 pieces with an X. If a circle, cut into 8 equal wedges. I like using a sharp pizza cutter for this process.
- Place scones at least 2 inches apart on the parchment lined baking sheet.
- Bake for 20 minutes or until lightly golden and cooked through. Remove from the oven and allow to cool slightly before adding glaze.
- For the topping, warm up some caramel sauce and drizzle over scones.
For these scones, you will find caramel drizzle on top as well as caramel flavor baked right into the scones. Baking with International Delight creamers is one of my go to kitchen tricks.
