Oh how I love all the delicious baked goods that can be made from cinnamon rolls!
While I love from scratch recipes and appreciate those who can make every single thing from scratch, I am someone who also loves shortcut recipes that can be tossed together quickly.
Recipes like my White Chocolate Raspberry Cinnamon Roll Casserole or these pull apart cinnamon roll muffins.
The first flavor I shared with you all a couple weeks ago was my Pumpkin Cinnamon Roll Muffins and now I’m here with Apple Pie Cinnamon Roll Muffins!
When crafting your holiday brunch menus, you definitely want to consider adding these. Here is why:
- They have my favorite combination of spices that are perfect for the fall and winter holidays – cinnamon, nutmeg and cloves!
- Chunks of real apple inside these muffins keep them extra fresh and moist.
- It’s a festive combination of two favorites – apple pie and cinnamon rolls!
HOW TO MAKE APPLE CINNAMON ROLL MUFFINS
These muffins come together quickly in prep, especially when you use canned cinnamon rolls. If you want to use from scratch cinnamon rolls, you could also do that, of course!
First, you will prep your oven and your muffin pan.
Then, chop up your cinnamon rolls and your apples.
Toss your cinnamon roll pieces in apple butter and place in the muffin tins, filling 2/3 of the way.
In a bowl, whisk together your eggs, half and half, vanilla and spices. Then pour the mixture over your cinnamon rolls and fill until 2/3.
Top with chopped pecans if you would like and bake!
The canned icing can be used as the drizzled icing.

Apple Pie Cinnamon Roll Muffins
A classic breakfast sweet is combined with a holiday dessert favorite to make the perfect holiday muffin - Apple Pie Cinnamon Roll Muffins! An easy and delicious show stopper for your holiday menus!
Ingredients
- 1 can of cinnamon rolls
- ⅔ cup apple butter
- 1 apple, peeled and diced
- 2 eggs
- ¼ cup Half and Half
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon nutmeg
- ½ cup pecans, chopped
Instructions
- Preheat oven to 375 degrees.
- Spray muffin pan with a non stick cooking spray.
- Unroll your can of cinnamon rolls and cut each roll into 6-8 pieces. {set aside the icing for later}
- Toss the rolls into the apple butter and then place into your muffin tins, filling ⅔ of the way.
- In a bowl, whisk together the eggs, half and half, vanilla, and spices until well combined. Pour the mixture over the cinnamon rolls, filling ⅔ of the way.
- Add the pecans on top of each if desired.
- Bake for 15-20 minutes or until tops are golden brown.
- Warm up your icing slightly and drizzle onto the top.
