Oh how I love all the delicious baked goods that can be made from cinnamon rolls! While I love from scratch recipes and appreciate those who can make every single thing from scratch, I am someone who also loves shortcut recipes that can be tossed together quickly. Recipes like my Cinnamon Roll Casseroles or these pull apart cinnamon roll muffins. The first flavor I shared with you all a couple weeks ago was my Pumpkin Cinnamon Roll Muffins and now I’m here with Apple Pie Cinnamon Roll Muffins!

Here’s what I love about these Apple Pie Cinnamon Roll Muffins. First – the combination of spices are my essential, baked good combination – cinnamon, nutmeg, cloves. Everything that says mom’s apple pie to me! Then, you have chunks of real apple inside that make the muffins fresh and moist.

While they make the quintessential fall breakfast recipe and would be great for Thanksgiving morning, I am always up for apple recipes! They are definitely my favorite all year long.

Apple Pie Cinnamon Roll Muffins
Course: Breakfast

Ingredients
  • 1 can of cinnamon rolls
  • cup apple butter
  • 1 apple peeled and diced
  • 2 eggs
  • ¼ cup Half and Half
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • ½ cup pecans chopped
Instructions
  1. Preheat oven to 375 degrees.
  2. Spray muffin pan with a non stick cooking spray.
  3. Unroll your can of cinnamon rolls and cut each roll into 6-8 pieces. {set aside the icing for later}
  4. Toss the rolls into the apple butter and then place into your muffin tins, filling ⅔ of the way.
  5. In a bowl, whisk together the eggs, half and half, vanilla, and spices until well combined. Pour the mixture over the cinnamon rolls, filling ⅔ of the way.
  6. Add the pecans on top of each if desired.
  7. Bake for 15-20 minutes or until tops are golden brown.
  8. Warm up your icing slightly and drizzle onto the top.
