Caesar Vinaigrette is a light and smooth alternative to a classic Caesar dressing!
Bryan is very weird about salads. First, he doesn’t like them. I know this isn’t really weird, but it feels weird to this salad lover over here. Second, he knows he should eat them for the veggies, so he will eat them without salad dressing in order to keep them as healthy as possible. Then complains how it doesn’t have any flavor. But slowly I have discovered that he sees vinaigrettes differently, so I am on a mission for some homemade vinaigrettes to make for us. I decided to start with a Caesar Vinaigrette that Bryan’s dad makes a lot.
The lemon juice is variable in this recipe, but Bryan and I definitely like it with more lemon juice than less. Start with less, mix, and do a taste test to see how much lemon juice you like to add in. We also make ours with some extra pepper!
In the past I always thought it would take far too long to make a homemade dressing, but this doesn’t! I have this ready in under 5 minutes. Plus, while we are not health nuts by any means, I will admit that it is nice to know exactly what is in my salad dressing.
- 1/4 tsp dry mustard
- 1/2 tsp black pepper or more
- 6 tbsp olive oil
- Lemon Juice to taste we like starting with 1 tbsp
-
Add everything to a mason jar, close and shake to stir. Taste to see if you have the desired balance you prefer.
