We’ve hit a barrier lately with getting Liam to eat a complete diet. As a whole, he’s a good eater but most vegetables tend to be a no go. 

The kid will eat black beans by the fistful, but it’s a big no to vegetables most days.

My husband can also be difficult when it comes to vegetables in his diet, so this is saying something.

HOW TO MAKE CREAMY ITALIAN SAUSAGE PASTA WITH PARMESAN

First, you will want to cook your Ronzoni SuperGreens® Rotini Pasta per the instructions on the box. Drain and set aside for later when it’s done. 

Second, start cooking your Italian sausage until no longer pink—crumbling as you go along. Drain and set aside for later when it’s done. 

My family loves using hot Italian sausage. It provides a great kick to the pasta recipe without being too spicy for kids, especially since it is balanced with the cream. 

I like to have those two things going at the same time while I also chop the sun-dried tomatoes, spinach and onions. 

Everything from here on out moves quickly with a few minutes for each step. Using the same skillet as the sausage, add oil from the sun-dried tomatoes jar or substitute with your preferred cooking oil. Let it heat.

  • Cook your onions and garlic for a few minutes. 
  • Melt your butter and add in cream. Cook for a few minutes. 
  • Add in sun-dried tomatoes, spinach, Italian sausage and herbs. Cook for a few minutes.
  • Remove from heat and add Parmesan. Stir. 
  • Then, enjoy your Italian sausage pasta with lots of veggies! 

DO THE NOODLES TASTE LIKE VEGETABLES?

No! It honestly tasted like a regular noodle to me, and my husband had no idea they were veggie fortified until I told him. 

Your kids won’t know either!

CAN I SUBSTITUTE THE HEAVY WHIPPING CREAM IN THIS ITALIAN SAUSAGE PASTA? 

The short answer is yes. You can. 

I believe that a little bit of cream in your diet is not bad for you. In fact, it has a lot of great nutrients so adding it into a recipe here and there won’t hurt anything. 

However, if you want to switch it out, you could try using one of these instead: whole milk, coconut milk, ricotta, cream cheese, whole fat greek yogurt, creme fraiche, or pureed cauliflower.

Substituting will, of course, change the flavor some, so keep that in mind.

VEGGIE FORTIFIED CREAMY ITALIAN SAUSAGE ROTINI!

CREAMY ITALIAN SAUSAGE PASTA

CREAMY ITALIAN SAUSAGE PASTA

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 12 Ounces Ronzoni SuperGreens® Rotini Pasta
  • 1 Pound Ground Italian Sausage (I prefer hot)
  • 2 Tablespoons Sun Dried Tomato Oil or cooking oil of preference
  • 1 Yellow Onion, chopped
  • 3 Tablespoons Garlic, minced
  • 4 Tablespoons Butter
  • 2 Cups Heavy Whipping Cream
  • 6 Ounces Sun Dried Tomatoes (jar packed in oil), chopped
  • 2 Cups Spinach, chopped in strips
  • 2 Teaspoon Italian Seasoning
  • 1 Teaspoon Garlic Powder
  • Salt & Pepper to taste
  • 1 Cup Freshly Grated Parmesan

Instructions

    Cook your rotini per the instructions on the box. When done, add to strainer and set aside until ready.

    Cook your Italian sausage until no longer pink, crumbling as you cook. Then remove from skillet into a strainer or onto a paper towel to drain. Set aside until later.

    While rotini and sausage are cooking, chop the sun dried tomatoes, onion and spinach.

    Using the same skillet of the sausage, add oil from sun dried tomatoes or preferred cooking oil and let it heat.

    Add onions and garlic. Cook for 2-3 minutes.

    Add butter. Once melted, add in heavy whipping cream. Simmer over low heat for 3-4 minutes.

    Add the chopped sun fried tomatoes and spinach, the Italian sausage, and the seasonings - Italian seasoning, garlic powder, salt and pepper. Simmer for 2-3 minutes.

    Remove skillet from the heat and stir in the parmesan cheese. Mix well.
