We have already experienced a few 70-degree days here in Chicago, which means I’m fully vested for summer treats! Which, of course, means ice cream and these Waffle Ice Cream Sandwiches!!
I remember growing up that many of my friends would have dessert every night with cookies or cupcakes always on hand. We were not that sort of household. Baked goods and “desserts” were saved for holidays and special occasions, but not ice cream. Ice cream was the one treat that we always had in the house, and I’ve definitely followed suit.
There are always a couple pints of ice cream in the house because we love eating it but also because it makes an easy last-minute treat when friends are over, especially for our gluten-free friends. Over the years we’ve had to host quite a few dinners with friends who require a gluten-free diet, so we’ve come to learn a few easy gluten-free recipes that we love and rely on – like these Waffle Ice Cream Sandwiches – as well as gluten-free brands and products we can trust.

TIPS FOR MAKING DIY WAFFLE ICE CREAM SANDWICHES:
I am using frozen waffles to make my waffle ice cream sandwiches because they are delicious and quicker to use. However, it’s important to toast them and then place them in the fridge to cool. If you use warm waffles, your ice cream will quickly melt and make it difficult for the sandwiches to set.
HOW TO PLACE YOUR ICE CREAM SANDWICH FILLING:
There are two ways to place your ice cream filling onto the waffle. The first is quicker and less perfect; the second creates a cleaner filling. Neither way is better. It really is just your preference. I prefer using the second method described below because it simply makes my brain happy.
First Method: Place three scoops of ice cream on top of the waffle in a triangle form and top with the second waffle, slightly pushing down as you do. Clean up the edges of the ice cream sandwich and place in the freezer to harden.
Second Method: Line a sided baking sheet with parchment paper and then spread out the ice cream until it’s 1/2″ to 3/4” thick and let it freeze. I prefer less filling in my waffle ice cream sandwich than more, especially since thicker ice cream filling makes it harder for my toddler to eat. When it’s set, use a round cookie cutter that is waffle size to stamp out your ice cream filling OR place a waffle on top and use a knife to cut out your circle filling. Place between your two waffle layers and place back into freezer to set.
HOW TO CUSTOMIZE YOUR ICE CREAM SANDWICH:
There are so many ways to make unique waffle ice cream sandwiches! The first obvious choice is by switching up the waffle flavor or ice cream flavor.
Then, you can add lots of fun toppings to the sides of the ice cream sandwich – sprinkles, crushed cookies, nuts, mini chocolate chips, etc. Think how great crushed cookies would be on the outside with a cookie flavored ice cream in the middle.
You could also add drizzles onto your ice cream sandwiches such as chocolate syrup or caramel (which would be amazing on the apple cinnamon waffle ice cream sandwich!). I would suggest not adding any drizzles though until you are ready to enjoy as it’s a bit messier than other options for storing.
Make it a sundae by adding bigger toppings onto the top of the ice cream sandwich. Imagine some chocolate drizzle with fresh berries on top! Yum!
Lastly, you could also dip your ice cream sandwiches into chocolate!
